What’s for breakfast? Pt. 2

What’s my favorite food? Eggs. What do I always have for breakfast? Eggs. This morning I decided to scramble up 3 eggs with the rest of the roasted veggies I had from dinner last night: sweet potatoes, brussels sprouts and kale. Topped it with goat cheese, added a side of avocado and BOOM — I have myself a delicious meal.

I generally don’t follow recipes because I’m ALWAYS short on time. I don’t let that stop me though from cooking up something fantastic. A lot of people like to make cooking complicated but it doesn’t have to be! When I do follow recipes though I love to follow Stupid Easy Paleo‘s. I think the name explains it all. 🙂 And her recipes are awesomeee, so you should probably check them out!

I’m not sure about where you live, but last night we (in the Boston area) got a huge blizzard, so it’s time for me to shovel. Enjoy the rest of your Sunday!

Kale/Goat Cheese Omelet

I can never have enough eggs. EVER. So, when I got home from work late tonight with nothing prepped in the fridge, eggs were the obvious choice. I decided to add some kale to the mix and then sprinkled goat cheese on top. I folded it in half and BAM! It’s now an omelet…and I didn’t even mean to get fancy.

The title of this post is inspired by the hilarious and all-around awesome Liz Wolfe of Cave Girl Eats. I just made us sound like besties, didn’t I? Well, after listening to her and Diane from Balanced Bites on their weekly podcast, it’s hard not to see (or hear) how great they are. (If you all want to learn more about paleo in a fun way, their podcast is the way to go.) Anyway, Liz’s first book Eat the Yolks is coming out soon and you should all probably pre-order it. I’m sure I will do a review when it comes out. I cannot wait to read it!
